Backyard Smoked Brisket

A brisket plan focused on clean seasoning, steady heat, a generous schedule and a thermometer instead of rigid finishing times.

Ingredients

Ingredient quantities scale mathematically; round practical items and adjust seasoning by taste.

  • 10 lb beef brisket
  • 3 tbsp coarse black pepper
  • 2 tbsp kosher salt (adjust by brand and meat weight)
  • 1 tbsp garlic powder
  • 1 tsp optional paprika

Step-by-step method

  1. Fully thaw the brisket and trim only as appropriate; keep work surfaces and knives clean.
  2. Season uniformly with salt and pepper, using a measured salt amount if consistency is important.
  3. Preheat the smoker and use an independent thermometer to monitor the cooking chamber at 225–300°F.
  4. Smoke, checking progress with a leave-in probe. If wrapping during the stall, use food-safe materials and watch for temperature changes.
  5. Check brisket internal temperature for safety with a food thermometer. USDA lists 145°F and a three-minute rest for intact beef roasts; tender brisket generally cooks well beyond this point.
  6. When tender, rest safely and slice across the grain shortly before service.
